Make A Fun Tradition Around Pancakes To Celebrate

Pancakes are a big deal here in Autismland. None of us are morning people so no one is getting up on purpose to make a big breakfast. That means pancakes are saved for special occasions like Not Back To School, Thanksgiving, Christmas, birthdays, you get the idea!

Not Back To School is our celebration when the public school kids go back to school. Here in Autismland, school doesn’t start until the Tuesday after Labor Day. Just like it did when I was a little girl in New England. That’s why we have a not back to school tradition.

Gluten free pancakes are best when mixed the night before and allowed to absorb the liquids into the rice flour. Most gluten free batters have rice flour in them. You won’t miss the gritty texture if you let it sit beforehand. It has to sit a minimum of 30 minutes.

Regardless of what’s picked the next day like Dumbo, Pikachu, or going on a pancake board, the prep all starts the same the night beforehand. Mix the batter then put in the fridge overnight. I also make sure we have fun drinks like orange juice, hot chocolate, or bunny milk which is what we call Strawberry Nesquick.

You can make them anyway you like if you’re not gluten free. 3 out of 4 of us are celiac here in Autismland so everyone eats gluten free. It’s easier on me that way. Let’s face it, easy is the way to go when you’re not a morning person
