Gluten Free Monster Eyeball Donuts is a fun once a year treat. Kids who are gluten free often have to forego the fun holiday edible treats. Making the necessary substitutions sometimes make an unbearable mess that doesn’t taste good at all.
Logan has been gluten free since he was a toddler so he doesn’t remember what glutenous donuts taste like. It’s easy to feed him gluten free stuff. Madison and I have been diagnosed celiac for only a few years. We know when the gluten free version doesn’t match the regular one.

We also want to partake in the festive food that many holidays bring with them. Considering that cooking is a great way to work on the master/apprentice role in RDI, it’s imperative that we make it fun. No one wants to cook brussel sprouts with Mom. Who doesn’t love donuts anyway?

Cup4Cup Yellow Cake Mix, 1.32 Lbs
Kraft Jet-Puffed Mini Marshmallows (Pack of 2)
Gluten Free Monster Eyeball Donuts
Ingredients
– 1 box of cake mix (we used Cup 4 Cup Vanilla Cake Mix )
– 2 Eggs
– 2/3 Cup of Water
– 1/3 Cup of Coconut Oil
– White Wilton Candy Melts
– Red Icing
– Black Icing
– Wilton Donut Pan

Directions
– Mix cake mix, water, coconut oil and eggs.
– Let blended cake mix sit for 30 minutes so the rice flour can absorb the liquid. It’s less gritty this way.
– Spray donut pan with cooking spray.
– Pour donut mix into a measuring cup for easy pouring. Pour the donut mix into the donut pan, making sure not to fill all the way to the top.
– Bake for 12 minutes at 350 degrees.
– Let cool for 5 minutes.
– Melt the white candy melts in the microwave.
– Dip the top of the donut into the white candy melts and then place on a plate. Let harden for 5 minutes.
– Place an unmelted candy melt in the center of the donut. You could also use a mini marshmallow!
– Use the black icing to draw a black dot on the center candy melt for an eye. I used the black Wilton icing and a No. 2 round tip.
– Use the red icing to draw squiggle lines for veins. I did 5-6 veins per donut also with the red Wilton icing and a No. 2 round tip.
