Gluten Free Candy Corn Parfait

Gluten Free Candy Corn Parfait is a fun and healthy way to celebrate fall. I know when Logan was smaller, one of the first things we noticed was that he reacted strongly to artificial dyes in his food.  Then there was the whole allergic to peanut issue that keeps him from eating most candy to this day. Candy corn is usually processed in the same facility as peanuts which makes it out for my highly allergic boy.  I more than make up for the fact that he can’t eat candy corn, I’m thankful it’s only available in the fall because I would be as big as a house if not. 

These do not taste anything like candy corn. I feel that I need to say that before you make it. What I have found is that Logan is more apt to eat something healthy if it looks fun as well. This is one of those times. 

Gluten Free Candy Corn Parfait

Ingredients:

1/2 cup Greek yogurt or Cool Whip
1/4 to 1/2 cup chopped pineapple
1/4 to 1/2 cup mandarin segments
 
Tip: Increase the fruit based on your desired serving size.
 
Directions:
Spoon the Greek yogurt or Cool Whip into the bottom of your serving container. I like to use mason jars as they are portable and I can make several at one time.
Evenly distribute the pineapple overtop, then follow with the mandarin slices.

Note: I also make these with cottage cheese on the bottom if you happen to have a child who will eat it.
