Gluten Free Chicken Fried Cauliflower Rice came to be fruition out of a need to find tasty gluten free recipes to feed my family. Three out of four of us are gluten free so everything I prepare at home becomes gluten free. Thankfully, Michael will eat anything so gluten free is not a big deal to him.
One of the other things that has caused me to get creative here in Autismland has been the absolute plethora of produce here in Arizona. We are so close to the Mexican border where produce has to pass through the inspection stations. If it is blemished in any way or past a certain ripeness, it will be rejected. Funny thing is that it’s just written off at that point. There are produce outreach programs that collect it and distribute it to the local community. Think FREE produce for days. We ended up with an abundance of cauliflower that needed to be used ASAP.
The great part of this recipe has to be that you could throw in whatever veggies you have hanging around. Bell peppers are tasty in it. Like it spicy? Throw in some jalapenos or poblanos. Look in your fridge for veggie stragglers hanging out. I like to double the recipe to make extra to freeze for lunches or a quick dinner on dance days.
Gluten Free Chicken Fried Cauliflower Rice
- 20 Ounces Cauliflower Rice
- 12 Ounces Green Beans
- ½ Cup Corn Kernels
- 6 Finely Chopped Asparagus Spears
- 2 Tablespoons Gluten Free Soy Sauce
- 1 Teaspoon Garlic Powder
- 2 Tablespoons Olive Oil
- ½ Cup Shredded Chicken
Prep time: 5 minutes
Cook time: 20 minutes
- Heat olive oil in large sauce pan on medium heat.
- Add Cauliflower rice, chicken, green beans, corn, asparagus spears, and garlic powder.
- Allow to simmer for 5 minutes.
- Add gluten free soy sauce.
- Allow to cook on medium heat for 15 minutes.
- Serve and enjoy!
